Pigs are bread throughout Valtellina, their meat is used for the preparation of sausages and exceptional cold cuts both for delicious and hearty meals.

This recipe uses flavors from the vegetable garden adding tomatoes to the ribs as well as flat beans, a variety of rarely used beans, but that you will surely enjoy in this recipe.

Ingredients for 4 servings:

  • 800 gr. pork ribs
  • 600 gr. flat beans
  • 1/2 onion
  • 40 ml. Dry white wine
  • 2 cans of peeled tomatoes
  • Extra virgin olive oil
  • Sage
  • 1 bay leaf
  • Salt t.t.


In a well-heated non-stick pan place the ribs and cook on medium heat, removing when necessary the fat that gathers on the bottom of the pan, until well skimmed and browned.

In the meantime prepare the flat beans. First, remove the ends and the eventual threads. Then blanch them in boiling water for 5 minutes and drain well.

Finely chop the onion and cook it in a big pot with a tablespoon of olive oil, sprinkle with white wine and add the tomatoes, sage and bay leaf.

Cook the sauce for about ten minutes, add the flat beans and bring to cooking point. Will require an additional 10 to 15 minutes.

When the flat beans are almost ready remove the bay leaf, add the ribs and season with salt and pepper.

You can serve with one or two spoonfuls of corn mush.
